Walnuts oxidise faster than almost any other nut, so ours are cracked and cold-stored right up until packing to keep their flavour bright rather than bitter. Expect a clean, buttery snap and the pale amber colour that signals a fresh, well-handled kernel — no rancid edge, no dust.
